Slow Cooker Pulled Beef
INGREDIENTS
- 4 pounds beef shoulder
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
INSTRUCTIONS
Start by preparing the beef shoulder. Pat it dry with paper towels, then season generously with salt and black pepper on all sides.
In a large skillet, heat the olive oil over medium-high heat. Once hot, sear the beef shoulder for 4-5 minutes on each side until it develops a nice brown crust. Remove the beef from the skillet and set it aside.
In the same skillet, add the sliced onion and cook for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
Pour in the beef broth, barbecue sauce, Worcestershire sauce, smoked paprika, chili powder, apple cider vinegar, and optional red pepper flakes. Stir well to combine and bring to a simmer.
Transfer the sautéed onions and garlic mixture to the slow cooker. Place the seared beef shoulder on top.
Cover the slow cooker with the lid and cook on low for 8-10 hours, or until the beef is fork-tender and shreds easily.
Once cooked, remove the beef from the slow cooker and place it on a cutting board. Let it rest for a few minutes before shredding with two forks.
Return the shredded beef to the slow cooker and stir it into the juices. Let it absorb the flavors for an additional 15-20 minutes.
Serve the pulled beef on hamburger buns with extra barbecue sauce and coleslaw if desired.
